Recipe

The author shares a recipe for Amaretto Cream Tarts, which is supposed to be good for clarity. Who doesn’t need that every now and then?

 

Eve’s Amaretto Cream Tarts For Clarity

For the crust:

1 1/2 cups graham cracker crumbs, 12 full crackers
1/3 cup sugar
6 tablespoons unsalted butter, melted

Preheat oven to 350 degrees and grease a 9-inch tart pan.

Mix graham crackers, sugar, and melted butter in a medium-sized bowl, then press into an even later in the prepared pie plate or springform pan.

Bake for ten minutes.

For the Filling:

1 cup mascarpone cheese at room temperature
3 tablespoons amaretto or almond extract
1/3 cup powdered sugar
1 teaspoon vanilla extract
1/8 tsp lemon juice
1/2 cup heavy whipping cream

Mix on high speed while you whisper to the filling:

With each stir, I make things clear.

When the ingredients are well combined, set aside. Then, in a separate bowl, whisk the whipping cream until light and fluffy.

Fold the whipping cream into the mascarpone filling as you whisper:

One more fold for insights to appear.

Fill the tart crusts with the filling.

For the pears:

2 pears
1 stick of butter
2 tsp sugar
1 tsp almond extract
apricot jam

Slice pears into 1/8-inch slices. Melt butter in a large skillet over medium heat. Add pears, sugar, and almond extract.
Cook on each side, swirling the pan gently, until caramelized on the surface, about 2 minutes. Remove pears to a plate to cool.

Once cool, top tarts with pear slices. Refrigerate the tarts for two hours, and then smooth a thin layer of apricot jam over the top of the pear slices for a glazed finish. Enjoy.
